Meatloaf

Amounts are flexible in this recipe—put in what you have or want. I use a whole green pepper. Beat the egg in the same bowl where you mix all the ingredients, to save washing an extra dish. Use a wooden spoon to mix everything together; I like to sprinkle seasoned bread crumbs on the top. Good served hot, with ketchup. Mashed potatoes (we like Idaho Spuds when it needs to be quick) and green beans complete the meal. One night, I used a frozen green pepper, red pepper and onion mix instead of the fresh pepper, and Ray loved it!

Preheat oven: 350°F

Ingredients:

1–1.5 lbs ground beef (uncooked)
3/4 cup uncooked oats
1/4 cup chopped onion
1/4 green pepper, diced
1/4 tsp black pepper
1 cup tomato juice
1 egg, beaten
salt as desired (perhaps 1–1.5 tsp)
(optional) seasoned bread crumbs
  1. Dice the green pepper; chop the onion.
  2. Beat the egg.
  3. Combine all ingredients thoroughly in a large mixing bowl.
  4. Pack firmly into an ungreased loaf pan (about 8.5" x 4.5" x 2.5").
  5. If desired, sprinkle with seasoned bread crumbs.
  6. Bake, uncovered, at 350°F for 1 hour 15 minutes. It should be bubbly.
  7. Let stand for 5 minutes before slicing.
Makes about 8 servings
