CREAMY CHICKEN AND NOODLES

I use the same pot for frying the chicken, cooking the noodles, and putting it all together.
This way, clean-up is easy.
Sometimes I replace the cream of chicken soup/milk/Parmesan with a homemade medium white sauce with cheddar cheese.
Ray and Bethany love this simple meal!


INGREDIENTS: PREPARATION:
  1. Cook chicken:
    Put some olive oil in a 6-qt pot.
    Fry the chicken breasts until no pink remains.
    Use a splatter guard; it's easier to clean than the whole stove!
    Remove the chicken and cool; cut into small pieces.
    You do not need to clean the pot before cooking the noodles—the leftover oil and tiny bits of chicken just add flavor!
  2. Cook noodles:
    Use the same pot that the chicken was just cooked in;
    cook noodles according to package directions.
    Drain; return to pot.
  3. Add other ingredients:
    Add the soup, milk, black pepper, cheese, chicken, and parsley.
    Mix well.
    Over medium/low heat, cook until hot and bubbly, stirring occasionally.
