BEEF and RICE CASSEROLE
When something this simple gets a near-10 with my husband (Ray), it's a definite winner!
Any type of rice should work—I've used both Minute Rice and 20-minute white rice.
Serve with a side salad and applesauce for a delicious, healthful, easy, and inexpensive meal.
INGREDIENTS and PREPARATION:
1 lb ground beef; fry in large frying pan; drain excess fat (as needed)
ADD to ground beef and MIX:
- 1 can corn (creamed; or regular, drained)
- 1 can green beans (drained)
- 2 cans cream of mushroom soup
- 12 cans milk
- about 3 cups cooked rice
Pour into a casserole dish.
Top with grated cheddar cheese.
Bake at 350° until bubbly (about 20-30 minutes).
