Uncle Ed's Spaghetti Sauce

Uncle Ed was my one of my Mom's brothers. This is his original recipe.
(Carol often uses less onion, more green pepper, crushed garlic, more spices ...
play with it as desired, and it's still delicious.)
No canned sauce can compare to homemade!
You can taste the love that gets added by frying, chopping, stirring.
Plus, the house smells sooooo good!!


INGREDIENTS:

2 medium onions
1/2 green pepper
1 large clove garlic
2–3 Tbs olive oil
1 to 1-1/2 lbs ground beef or sausage (optional)
3 28-oz cans Italian Plum tomatoes (or crushed tomatoes)
2 6-oz cans tomato paste
1 can tomato sauce (optional)
6 sprigs parsley
1/2 tsp oregano
1/2 tsp sweet basil
1/2 tsp thyme
1 tsp salt
pepper

PREPARATION:
  1. In a pot large enough to hold all the spaghetti sauce, cut up the onions, green pepper, and garlic.
    Sauté in olive oil until onions are transparent—about 3–4 minutes.
    (If garlic browns, the sauce will taste bad, so be careful!)
    If using meat, brown meat in a separate pan and drain off the fat.
    Add to the onion and pepper mixture.
  2. Add the tomatoes and tomato paste.
    If sauce is too heavy, add some water or tomato sauce.
    Bring to a low simmer, uncovered.
    Cut in the parsley, oregano, sweet basil, thyme, salt and pepper.
  3. Cook uncovered for about 2 hours (or until sauce is the right consistency),
    stirring and scraping bottom frequently to avoid burning.
    CAUTION: The sauce is very thick and burns easily!
