Uncle Ed's Spicy Pumpkin Bread

This is foolproof! I've made it for decades, and it has never come out badly. I've used just white flour; white/wheat; white/wheat/self-rising (depending on what I had). I've used vegetable oil, canola oil, others. It always comes out amazing! It keeps for a long time in the refrigerator, but it never lasts that long, because it's so delicious. Uncle Ed is my Mom's brother. My adjustments are given in brackets.


Preheat oven to 350°F.

BEAT TOGETHER:
4 eggs, well-beaten
1 16-oz (or 15-oz) can pumpkin (about 2 cups)
1 cup cooking oil
2/3 cup cold water

SIFT AND ADD TO ABOVE:
[I never sift. I just plop it all in and mix.]

3-1/4 cups flour
2 tsp baking soda
1-1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
pinch cloves
2 cups sugar [the original recipe called for 3 cups, but I never use that much]

Nuts can be added, if desired.
Grease the pans. Enjoy!!
