BREAD PUDDING

If you've got bread that has dried out, this is the dessert for you!
Not too rich—the chocolate chips add just the right amount of sweetness.
Great hot or cold.
Serve with half-and-half, whipped cream, or vanilla ice cream (as desired).

The original recipe is from Martha Stewart; I've tweaked it a bit.


INGREDIENTS: PREPARATION:
  1. Butter a 9" x 13" baking dish; set aside.
  2. Heat milk and cream over medium-high heat until just about to simmer; remove from heat.
  3. Whisk eggs, sugar, salt, vanilla, cinnamon, and nutmeg.
    Whisking constantly, pour into egg mixture: pour slowly at first; you can pour faster after a modest amount is mixed in.
  4. Pour mixture over bread; fold to combine; let sit (stirring occasionally) until bread has absorbed most of liquid.
  5. Add chocolate chips (as many as desired).
  6. Pour bread mixture into buttered dish.
    Bake in a water bath: place dish in a larger pan; pour boiling water into larger pan to reach about halfway up sides of pudding.
    The moist heat keeps the pudding from getting ‘rubbery’; it also provides a slower, more even heat source.
  7. Bake about 50 minutes, until golden brown.
